Mediterranean Pita Pizza
Looking for a quick lunch that doesn't sacrifice health? This delicious recipe is full of nutrition AND bursting with flavor! Marinade your own garbanzo beans overnight for a custom flavor and you'll be able to assemble this amazing dish right in the breakroom!
Ingredients
- 1 whole wheat pita
- 4 tbsp hummus
- 1/4 cup chopped baby spinach
- 1/4 cup marinated garbanzo beans
- 1/4 cup tabbouleh
- 2 tbsp Crunchy Onion Kick
Garbanzo Bean Marinade
- 1/4 cup garbanzo beans, rinsed and drained
- 3 tbsp Roasted Garlic Olive Oil
- 1/4 tsp oregeno
- 1/4 tsp parsley
- sea salt
Instructions
- Spread hummus evenly over whole wheat pita. Layer tabbouleh (we love the Trader Joe's Cauliflower Tabbouleh), chopped baby spinach, and marinated garbanzo beans.
- Top pizza with Crunchy Onion Kick to really maximize your flavor! Enjoy as a meal or cut into slices to serve as an appetizer.
Garbanzo Bean Marinade
- In a small bowl add garbanzo beans, Roasted Garlic Olive Oil, oregano, parsley, and sea salt to taste. Refrigerate for 8 hours or overnight. To skip this step, you can always purchase pre-marinated garbanzo beans!
