Food Scientist / Recipe & Development

Calling all food scientists! The Olive Oil Factory is seeking a Food Scientist to join our R&D team, to help us continue to create the delicious foods we are known for! We specialize in Extra Virgin Olive Oil, Balsamic Vinegar, Mustards, BBQ Sauces, Marinades, Pasta Sauces, and spreads to name a few. Our company does co-packing, private label, and has its own brand of Gourmet Goods, Sonoma Harvest.

As our food scientist and formulator, you will be a key member of our R&D team involved in developing new recipes, creating lab samples, and moving new projects through all the channels to production. You will be a critical link between sales, procurement, quality assurance and production.

What you’ll do:

Recipe and Development: 

  • Responsible for creating and maintaining accurate recipe database- both electronic and physical
  • Assist on nutritional label development and approval ( both internal company products and customer skus)
  • Assist on recipe development for company website/blog
  • Convert lab samples UOM’s to production UOM’s
  • Ensure accurate roll out of initial production runs to recipe and development retains for taste, color, and viscosity. This requires being physically present with mixer and on lines
  • Check initial runs to yield %’s- work with mixer, QA, R&D, Production Manager 
  • Establish specs for raw materials used in recipe and development with purchasing
  • Work with purchasing to acquire sample materials for recipe and development tests
  • Ensure recipe and development lab supplies are fully stocked and equipment is clean and in working order
  • Help purchasing source alternative vendors for similar, but more affordable raw materials
  • Create samples for potential new products, as needed
  • Develop new SKU’s
  • Recreate customer recipes, as required 

Quality Assurance:

  • Create procedures of how final approved R&D recipes get converted to BOMs for production.
  • Create procedures for when BOM needs to be revised
  • Working with QA to get quantitative data to build finished product specification sheets (i.e. weights, pH and Brix)
  • Updating item description in Misys to comply with the OOF Allergen Program
  • Working with QA to evaluate unit of measure of ingredients that produces the most consistent product 
  • Validating ingredients listed on label complies with current BOMs.
  • Work with QA to create a label review program that has procedures in place for existing labels, new labels and obsolete labels.

What you’ll bring:

• Preferably a degree in Food Science or other relevant fields with ideally 3+ years industry experience;

• Solid background in product development and food manufacturing;

• Proficiency in food ingredient and/or food formulation development in novel product categories;

• Excellent technical writing and communication skills.

This is a full-time regular position based out Fairfield, CA.
