Here's a simple, light salad that can stand on it's own, or compliment a fresh entree like chicken, fish, or a flatbread. It's summertime! Pick up some ripe strawberries at the farmers market and hurry home to combine it with nutrient dense spinach, creamy goat cheese, crunchy walnuts, and our sweet but simple Sonoma Harvest Sweet Rosé Vinaigrette. Enjoy!
In a small pan over medium-low heat, add butter and California Extra Virgin Olive Oil. Stir in walnuts and saute until they become fragrant, about 5-10 min.
Toss spinach in 2 - 4 tablespoons of Sweet Rosé Vinaigrette.
Plate spinach and top with strawberries, goat cheese and walnuts. Add grilled chicken to make it a meal!
Serves two as a meal or four as a side.
