Mediterranean Pita Pizza

Looking for a quick lunch that doesn't sacrifice health? This delicious recipe is full of nutrition AND bursting with flavor! Marinade your own garbanzo beans overnight for a custom flavor and you'll be able to assemble this amazing dish right in the breakroom!

 1 whole wheat pita
 4 tbsp hummus
 ¼ cup chopped baby spinach
 ¼ cup marinated garbanzo beans
 ¼ cup tabbouleh
Garbanzo Bean Marinade
 ¼ cup garbanzo beans, rinsed and drained
 ¼ tsp oregeno
 ¼ tsp parsley
 sea salt

Spread hummus evenly over whole wheat pita. Layer tabbouleh (we love the Trader Joe's Cauliflower Tabbouleh), chopped baby spinach, and marinated garbanzo beans.

In a small bowl add garbanzo beans, Roasted Garlic Olive Oil, oregano, parsley, and sea salt to taste. Refrigerate for 8 hours or overnight.
