Our barrel aged balsamic vinegar is traditionally aged in the Solera Style- older aged balsamic barrels are topped off each year with newer balsamic. This process may go on for up to 15 years. The result is a slightly sweet and mildly acidic, syrupy treasure that may be used in salad dressings, desserts, finishing sauces, or as an every day condiment. Mix with your favorite olive oil or dijon mustard for an exquisite salad dressing on the “fly”. Enjoy liberally!
